SAKE GLOSSARY
Sake, commonly referred to as rice wine, is brewed from polished rice, water, yeast and koji. Sake is categorised by rate polishing ratios (RPR) which is the percentage of grain that remains after the outer part of the rice has been polished away.
CATEGORIES OF SAKE
Junmai - sake that is brewed only with rice, with no added distilled alcohol
Daiginjo - Rice grains polished down to 50% or less
Ginjo - Rice grains polished down to 60% or less
Honjozo - Rice grains polished down to 70% or less
